Corn & Cumin Raita

Corn & Cumin Raita

2 tsps cumin seed
1 (8 oz) can kernel corn, drained
1 small tomato, chopped
1 (8 oz) container plain yogurt
1 tsp ground black pepper
1/2 tsp ground cori&er
3 Tbsp chopped fresh cilantro

In a small saute pan, toast cumin seed over high heat; crush seed & stir together with remaining ingredients

Makes about 1 1/2 cups

Peachy Tortillas

Peachy Tortillas

2 large peaches (or apples)
4 large flour tortillas (10-inch)
2 Tbsp butter or margarine
Cinnamon & sugar, to taste

Peel peaches & slice thinly
Arrange slices in a row near center of tortilla
Fold tortilla over peach slices
Repeat until you have filled all four tortillas

In a large skillet, over medium heat, melt butter or margarine
Place filled tortillas in skillet & fry 4 to 5 min until golden-brown, turning once
Remove from skillet; sprinkle with cinnamon & sugar & serve

Fruit Burritos

Fruit Burritos

Vegetable oil (for frying)
1 can fruit pie filling
10 to 12 flour tortillas
1/3 cup granulated sugar
1 tbsp cinnamon

Heat vegetable oil in a large skillet or deep fryer
Put 1 tbsp pie filling in the center of each tortilla & roll up like a burrito, folding both ends over
Deep fry a few at a time until medium brown & crispy
Drain well, & while still hot, shake in a brown paper bag with the sugar & cinnamon
