Chuck Wagon Coffee Cake

2 1/2 cups all-purpose flour
2 cups brown sugar
1/2 tsp salt
2/3 cup butter or lard
2 tsps baking powder
1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp baking soda
1 cup sour milk*
2 eggs, well beaten

Preheat oven to 400 deg F

Mix flour, sugar, salt & butter in a bowl to make fine crumbs
Remove 1/2 cup of the crumbs for the cake topping
To the remaining mixture, add the remaining dry ingredients
Add beaten eggs to the sour milk
Add to dry mixture & beat until very smooth
Pour into a well-greased 8 x 12 x 2-inch biscuit pan, then sprinkle the crumbs on top
Bake for 20 to 30 min
Serve hot from the pan
Nuts may be added to the topping, if desired

* Make sour milk by adding 1 tbsp vinegar to 1 cup of milk

Sweet, cake-like corn bread is served at family restaurants in Los Angeles

1 (18
5 oz) package yellow cake mix
1 (15 oz) package corn bread mix

Mix cake & corn bread batters according to package directions
Blend together & turn into 2 greased 9-inch square baking pans
Bake at 350 deg F for 30 to 35 min, or until corn bread springs back when lightly touched
