Salsa Negro Recipe

Salsa Negro

1 (15 oz) can black beans, drained
2 tablespoons chopped red onion
3/4 cup chopped tomato
Juice of 1 Mexican lime
1 tablespoon chopped green chiles
1 tsp granulated sugar
Salt & pepper, to taste

Combine ingredients
Chill before serving

Makes about 2 1/2 cups

Chipotle Salsa

Chipotle Salsa

Source: Tabasco, Avery Isl&, Louisiana

2 cups chopped fresh tomatoes
1/3 cup chopped fresh cilantro
1 tbsp lime juice
1 tbsp Tabasco br& Chipotle Pepper Sauce
1 clove garlic, minced
1/4 tsp salt

Combine all ingredients in a bowl & mix well

Makes 2 cups

Garlic Butter Sauce

Garlic Butter Sauce (Mantequilla de Ajo)

4 Tbsp unsalted butter
4 cloves garlic, crushed

Melt butter, add garlic, & set aside

Strain just before using
Brush on meat or fish before broiling or grilling
