Tomatoes, Peppers And Onions

Tomatoes, Peppers and Onions (Peperonata)

Toss marinated olives into this dish if you like

2 medium onions, sliced
2 tablespoons olive oil or vegetable oil
3 medium green bell peppers, cut into strips
1 teaspoon dried basil leaves
1 teaspoon red wine vinegar
1/2 teaspoon salt
1/4 teaspoon pepper
2 medium tomatoes, coarsely chopped

Cook and stir onions in oil in skillet until tender; add remaining ingredients except tomatoes
Cover and cook over low heat 10 minutes
Add tomatoes
Cover and simmer until green pepper is tender, about 5 minutes
Garnish with ripe olives if desired

1 pound ground beef
1 tablespoon chopped onion
1/2 cup ketchup
3 tablespoons grated Parmesan cheese
1/3 teaspoon garlic powder
1/4 teaspoon fennel seed, crushed
1/4 teaspoon dried oregano
6 to 8 hamburger buns
Garlic spread (see following recipe)
6 to 8 slices Mozzarella cheese
Garlic Spread

Brown meat and drain
Add onion, ketchup, Parmesan cheese, garlic powder, fennel, and oregano
Simmer for 20 minutes

Split hamburger buns
Spread 1 teaspoon Garlic Spread on each bun top
Divide meat mixture evenly on bun bottoms
Top meat mixture with a cheese slice and add top bun
Wrap each sandwich in a square of foil
Bake in a 350 degree F oven for 15 minutes, or until heated thoroughly through

Garlic Spread
2 tablespoons butter, softened
1/4 teaspoon garlic powder
1/4 teaspoon paprika

Combine butter, garlic powder and paprika
Mix well

Chicken Cacciatore

Chicken Cacciatore

1 (3 pound) broiler-fryer chicken
2 cups water
1 (15 oz) can tomato sauce
1 tablespoon oregano
1/2 cup dry white wine
1 medium onion, chopped
1 large green bell pepper, thinly sliced
1 clove garlic, minced
1/2 teaspoon salt
1/4 teaspoon pepper

Bring chicken to boil in a pot of water
Simmer chicken for 30 minutes

Remove from heat and cool
Pour stock into a measuring cup to make 2 cups and refrigerate
skim any fat from top of reserved stock when cooled

De-bone the chicken
Discard bones and skin
Cut chicken into chunks
Place all ingredients in a pot and cover
Bring to a boil, turning heat down immediately
Simmer 30 minutes, uncovered, or until sauce has thickened

Serve on a bed of rice
