Orange-Date Cake
1 cup butter
1 cup granulated sugar
Pinch of salt
Grated rind of 2 oranges
1 cup sour milk
2 1/2 cups all-purpose flour
2 eggs, beaten
1 cup dates, chopped
1 cup nuts, chopped
1 tsp baking soda
1 tsp baking powder
Mix all together well
Bake in a buttered 13 x 9-inch dish at 350 deg F for 45 min to 1 hour
Let st& for 5 min; mix the strained juice of 2 oranges with 1 cup granulated sugar
Spread orange-sugar mixture over top of cake
When dry, sprinkle with confectioners’ sugar

2 large, ripe mangos, peeled & chunked
1 (16 oz) jar or can of mango slices, undrained
2 to 3 cups ice cubes
10 ozs light rum
2 ozs dark rum
Juice of 2 Mexican limes
In a blender, puree all the ingredients in two batches & pour into a pitcher
Store in the freezer briefly or serve immediately
If you cannot find fresh mangos, use a 26- to 28-oz jar or can of the fruit with syrup in the recipe
Add a little more lime juice to counterbalance the sugar
