Basque Sheepherder’s Bread
Try heating a little olive oil with fresh herbs & dunk chunks of the bread into it
1/2 cup butter
1/2 cup granulated sugar
1 tbsp salt
3 cups hot water
2 packages dry yeast
7 to 7 1/2 cups unbleached flour
In a very large bowl combine butter, sugar, salt & hot water
Stir only until butter is melted
Set aside so ingredients can cool until they are warm
Stir in yeast
Cover & set aside in a warm place until it bubbles, about 10 min
Add 5 cups flour & beat vigorously with a large wooden spoon until batter is smooth
Add more flour (about 2 cups) gradually to form a stiff dough
Knead, with long strokes, for about 10 min on a floured board
Add only enough flour to prevent sticking
Place dough in a large greased bowl; cover with a damp dish towel, & let rise in a warm place until doubled

This fast, easy bread goes great with a bowl of chili
Serve it warm
You can also add red chile powder, minced onion or chopped green chile to the dough
Make sure that all the excess moisture has been squeezed from the chopped green chile
1 cup milk
3 Tbsp granulated sugar
1 tbsp salt
1 1/2 Tbsp shortening
1 cup warm water
2 packages yeast
4 1/2 cups unbleached white flour
Scald the milk & stir in the sugar, salt & shortening
Cool the mixture to lukewarm
Pour the warm water into a large bowl & sprinkle with the yeast
Stir until the yeast is dissolved
Stir in the cooled milk mixture
Add the flour & stir until well blended, about 2 min
Cover & let the mixture rise in a warm place until more than doubled in bulk
Spicy Meatball Burritos
Spicy Meatball Burritos
2 lb ground beef
1 large green bell pepper, diced
2 garlic cloves, minced
1 large onion, diced
1/4 tbsp salt
4 Tbsp chili powder
2 eggs
1 tbsp parsley
1 cup brown rice (pre-cooked for 15 min)
2 (15 oz) cans tomato sauce
1 cup water
1 tsp chili powder
6 to 8 (10- to 12-inch) flour tortillas
In a large bowl, combine ground beef, bell pepper, garlic, onion, salt, chili powder, eggs, parsley & brown rice
Mix well
Roll into balls the size of a large walnut
Set aside
In a large skillet, add tomato sauce, water & chili powder
Bring to a simmer, then add meatballs & continue simmering for 40 to 50 min, stirring occasionally
When done, fill tortillas & serve with your favorite salsa
You may wish to garnish with lettuce & tomato
Makes 5 to 6 servings
