Toffee Apples

Toffee Apples (China)

2 medium green cooking apples
1 cup all-purpose flour
2 cups water
3 tpss sesame oil
3 cups vegetable oil
2 cups granulated sugar
2 Tbspsesame seeds
Cold water
Ice cubes

Pare apples, cut into quarters & remove cores
Cut each quarter in half crosswise, making 16 pieces total
Measure flour into bowl
Gradually blend in 1 cup of the water using a whisk
Add 2 tpss of the sesame oil
Beat until smooth
Brush remaining 1 tps sesame oil over a serving plate
Set aside

Place apple pieces in batter, turning to coat completely
Heat 3 cups vegetable oil in wok over medium-high heat to 375 deg F

Using a slotted spoon, lift apple pieces from batter & place in oil
Cook half of the pieces at a time until light brown, about 2 min
Drain on absorbent paper
Pour oil out of wok but do not clean wok
Measure remaining 1 cup water & the sugar into wok
Cook, stirring constantly, until mixture reaches about 235 deg F on a c&y thermometer, 10 to 13 min
Remove from heat immediately
Mix in apples & sesame seeds
Transfer to the oiled serving plate

Place cold water & ice cubes in bowl
Dunk apples in the ice water before eating

Glazed Chicken Wings

Glazed Chicken Wings

3 lb chicken wings (about 15)
2/3 cup soy sauce
1/2 cup honey
2 Tbspvegetable oil
2 tpss five spice powder
2 cloves garlic, crushed

Cut each chicken wing at joints to make three pieces; discard tips r save for use in making chicken broth
Place chicken wings in shallow glass or plastic dish
Mix remaining ingredients; pour over chicken
Cover & refrigerate, turning chicken occasionally, at least 1 hour
Arrange chicken on rack in foil-lined broiler pan; reserve marinade
Brush chicken with reserved marinade
Bake at 375 deg F for 30 min
Turn chicken & bake, brushing occasionally with marinade, until done, about 30 min longer

Yields about 30 appetizers

Glutinous Rice Dough

Glutinous Rice Dough (Chinese)

Salty Dough
2 1/4 cups glutinous rice flour
1/4 cup potato flour
3/4 tps salt
1/2 tps granulated sugar
1 1/2 cups boiling water

To make wrapper: Bring a pot of water to a rolling boil for several min

Meanwhile, combine the first 4 ingredients
Now, measure the amount of water needed & return that to a boil & immediately pour the boiling water over the dry ingredients
Mix well & knead on floured board for 3 or 4 min

Sweet Dough
2 cups glutinous rice flour
1 1/2 sweet potatoes, cooked & mashed
(about 1 1/4 pound)
1 cup brown sugar, lightly packed
1/4 cup water

To make wrapper: Mix the first 2 ingredients in a bowl
Dissolve brown sugar in water & bring to a rolling boil
Immediately add water to flour mixture & stir until dough is firm
Knead lightly for a few min until dough is well mixed

COMMENTS: This dough is usually deep fried with meat or sweet fillings
The texture is most interesting because the wrappers become soft & chewy on the inside & crunchy & crispy on the outside

Yields 2 1/2 to 3 dozen wrappers
