Sweet Ravioli

Sweet Ravioli

1 cup butter or margarine, softened
2/3 cup granulated sugar
1 egg, beaten
1 teaspoon grated lemon rind
1/4 teaspoon almond extract
2 1/2 cups all-purpose flour
1/4 teaspoon baking soda
1/8 teaspoon salt
About 1/2 cup raspberry preserves
Sifted confectioners’ sugar

Beat butter at medium speed of an electric mixer; gradually add 2/3 cup sugar, beating well
Add egg, lemon rind, and extracts; mix well

Combine flour, baking soda, and salt; add to creamed mixture
Divide dough in half
Roll each portion of dough between 2 sheets of wax paper to a 12-inch square
Chill at least 1 hour

Remove one portion of dough from refrigerator; remove top piece of wax paper, and cut dough into 1 1/2-inch squares
Place 1/4 teaspoon raspberry preserves in center of half of squares; brush edges of filled squares with water
Place unfilled squares over filled squares; press edges to seal
Cut an X on top of each
Repeat with remaining dough and preserves
Place cookies on greased cookie sheets, and bake at 350 deg F for 9 to 11 minutes or until edges are lightly browned
Remove from oven, and cool on baking sheets 4 to 5 minutes
Transfer cookies to wire racks, and cool completely
Sprinkle with confectioners’ sugar

Ingredients depend on how much you want to make (this freezes well and can be used throughout the year)

2 or 3 bunches cilantro
2 or 3 medium red bell peppers
2 or 3 green bell peppers
1 large onion (which ever you like the
best, to your taste)
Garlic cloves (you can add as many cloves
as you desire, if you like a lot of garlic, more,
if not 2 or 3 cloves should do)

Wash the vegetables clean
Begin adding portions of EACH ingredient to a food processor or blender
(If you try to do it all at once it may be too hard on your machine
) Chop into a fine consistency
There should be no lumps, it should have the consistency of baby food

Continue adding vegetables until all of the ingredients have been added to the mixture

This is very simple to make and it is great in the preparation of any ethnic dish, it has a potent but delicious flavor and only takes a couple of tablespoons to do the job
I posted a recipe awhile back that called for sofrito and now you can make your own!!

Cheese And Rice Casserole

Cheese and Rice Casserole (Riso e Formaggio)

2 cups water
1 cup uncooked regular rice
1 teaspoon salt
1/2 teaspoon dry mustard
1/2 teaspoon red pepper sauce
1/4 teaspoon pepper
1 medium onion, chopped
1 medium green bell pepper, chopped
2 cups shredded mozzarella or Cheddar cheese (8 ozs)
4 eggs, slightly beaten
2 1/2 cups milk
1/2 cup grated Parmesan cheese

Heat water, rice, salt, mustard, red pepper sauce and pepper to boiling, stirring once or twice; reduce heat
Cover and simmer 14 minutes, without lifting cover or stirring
Remove from heat
Fluff rice lightly with fork; cover and let steam 5 to 10 minutes

Lay half each of the rice, onion, green pepper and mozzarella cheese in greased 11 x 7-inch baking dish; repeat layers

Mix eggs and milk; pour over rice mixture
Sprinkle with Parmesan cheese
At this point, the casserole can be covered and refrigerated up to 24 hours
Bake uncovered at 325 deg F until set, 45 to 50 minutes
Let stand 10 minutes
Cut into squares

Yields 8 servings
