2 cups heavy cream
2/3 cup condensed milk ( not evaporated)
1 (21 oz) can cherry pie filling
1 teaspoon rum extract
1/2 cup mini chocolate chips
1/2 cup finely chopped toasted nuts of choice
Although not a true spumoni ice cream
this dessert is so and pretty
Freeze solid for an ice cream texture or partially frozen for a mousse like texture
I like to make this for my family for festive occasions
Chill milk and cream in the refrigerator at least 30 minutes
Then whip both together with an electric mixture until soft peaks form
Blend in the cherry pie filling, extract and chips and nuts
Place in an 8 or 9 inch square pan
Cover and freeze firm
Serve as is or add ice cream toppings of choice
Farina Dumplings
Farina Dumplings (Gnocchi alla Romana)
3 cups milk
1 cup farina or semolina
2 beaten eggs
1 tablespoon butter
1 teaspoon salt
Dash of pepper
1/4 cup margarine
1 cup grated Parmesan cheese
Heat milk to scald
Reduce heat
Slowly stir in farina and cook until thick, about 5 minutes
Remove from heat
Stir in eggs, margarine, salt and pepper
Beat until smooth
Spread in a greased 13 x 9-inch pan
Cool
Cover and refrigerate for 2 to 3 hours until firm
Cut into 1 1/2 inch squares or circles
Place overlapping in an ungreased dish
Dot with 1/4 cup margarine
Sprinkle with cheese
Bake at 350 deg F for 30 minutes
You can brown a little more under the broiler, if needed

Shrimp Egg Foo Yung
6 strips bacon, diced
1 medium onion, chopped
2 cans bean sprouts, drained
1 package frozen, cleaned shrimp
Salt
6 eggs
Cook onion & bacon over low heat in a heavy skillet until done
When bacon is crisp, add shrimp which have been thawed & cut into thin strips
Add bean sprouts & salt & cook 2 to 3 min
Place in bowl & allow mixture to cool
When cool, add eggs & a dash of water
Beat mixture until light
Drop mixture by tablespoon into hot skillet, using oil or drippings to fry
Cook until patties are brown on one side; turn & brown other side
Total time should be about 5 min
Place patties on a hot platter
Before serving, top with chopped scallions & sauce
Serve over boiled rice
Serves 4 to 6
Sauce
1 cube beef bouillon
3/4 cup water
2 tpss soy sauce
1 tablespoon cornstarch
Cook over low flame until thickened
