Agua Fresca de S&ia (Fresh Watermelon Drink)
8 cups loosely-packed seeded watermelon chunks
1/4 cup packed fresh mint leaves
12 ozs sparkling water
Sugar
Ice cubes
Mint sprigs (for garnish)
In a blender, puree the watermelon in batches, adding the mint leaves to one of the batches
Pour the watermelon juice into a large pitcher
Stir in the sparkling water & taste
Add 1 tbsp or more of sugar if needed
Chill for at least 1 hour
Pour over ice in tall glasses & garnish each glass with a mint sprig, if desired
Variation
Substitute mangos or blood oranges for the watermelon
Southwestern Salsa Meatballs
Southwestern Salsa Meatballs
1 lb Bob Evans Original Recipe Roll Sausage
1 (16 oz) jar prepared salsa – medium heat
1 1/4 cups plain bread crumbs
1 egg
1 1/4 tsps granulated sugar
3/4 to 1 cup red bell pepper, diced
3/4 cup green bell pepper, diced
1/2 cup scallions, sliced – green part only
1 1/2 tsps ground cumin
1/2 to 3/4 tsp garlic powder
Preheat oven to 350 deg F
In a medium size bowl, add sausage, egg & 1 cup salsa (8 ozs)
Add bread crumbs until mixture starts to firm
Combine mixture with cut vegetables & seasoning
Form into 1 1/2 to 2 inch meatballs & place on non-stick cookie sheet
Leave space between meatballs
Bake for 15 to 20 min depending on oven
Serve with remaining salsa in a dish & side container of wooden picks on tray
Makes approximately 24 to 26 meatballs
Refrigerate leftovers
