Baked Stuffed Papayas (Jamaica)
1 pound ground beef
1 medium onion, chopped
1 clove garlic, minced
1 (16 ounce) can whole tomatoes, drained
1 jalape

Cake
4 eggs, separated
1/2 cup granulated sugar
1/4 cup cornstarch
1/4 cup cake flour
1 cup sherry
Preheat oven to 350 deg F
In a large bowl beat egg whites until very stiff
In a small bowl beat yolks until lemony; add sugar & continue beating
When stiff, add slowly, by Tbspful, the cornstarch & cake flour
Carefully fold yolk mixture into beaten whites
Spoon into a well-buttered 8 x 8-inch pan
Bake for 15 min
Turn off oven, slightly open door, & allow cake to cool in the oven
When cold, cut into 16 squares
Arrange in a serving bowl & slowly saturate with sherry
Pour hot Syrup over cake & refrigerate
Serve cold

2 cups granulated sugar
1 cup water
Bring to a boil & cook for 5 min

My sister makes these in advance she wraps them up & freezes them & uses them as needed
These are great & her son loves them
1 lb bulk sausage
1 can Ro-Tel tomatoes
4 eggs, beaten
8 ozs Cheddar cheese, shredded
10 flour tortillas
Brown sausage until done, drain excess grease
Add the eggs & cook until done
Add tomatoes & cook until heated through
Heat tortillas in microwave until heated through or in oven
Fill tortillas with a couple of spoonfuls of meat mixture, sprinkle with cheese, fold or roll
Then wrap in plastic wrap & freeze
When ready to serve, remove from freezer & microwave for 2 min or till heated through
