1 (12 oz) ripe mango, peeled,

Yield: 4 servings
2 1/2 cups shredded cooked chicken
1 (1
27 oz) package fajita seasoning
1/3 cup water
8 ozs tortilla chips
1 1/4 cups grated Cheddar cheese (5 ozs)
1 cup grated Monterey jack cheese
1 large tomato, chopped
1 (2 1/4 oz) can sliced ripe olives, drained
1/4 cup sliced green onions
Salsa
In medium skillet, combine chicken, fajita seasoning & water; blend well
Bring to a boil; reduce heat & simmer 3 min
Arrange chips on a large shallow ovenproof platter
Top with chicken & cheeses
Place under broiler to melt cheese
Top with tomato, olives, green onions & desired amount of salsa
Garnish with guacamole & sour cream
Makes 4 appetizer or 2 main dish servings
NOTE: Sliced jalapenos may be added to the top, if desired
Red Chile Paste Recipe
Red Chile Paste
This is the basis for enchiladas & chile con carne
24 dried red chiles
2 tablespoons mashed garlic
1 tsp salt
2 quarts water or to cover
Wash whole dry chile pods
Wearing rubber gloves, remove stems, veins & seeds
Cover chiles with water in a heavy kettle, then bring to a boil
Lower heat & cook slowly for 30 mins
Drain chiles
Put through a col&er or sieve after testing to make sure the pulp separates easily from the skin
Add garlic & salt to the pulp
Blend smooth for a pure, thick chile paste
