3 cups water
3 cups granulated sugar
10 tsps instant coffee
4 tsps vanilla extract
1 quart vodka
Simmer water, sugar & coffee for 1 hour; cool
Add vanilla extract & vodka; let st& for 30 days

Santa Fe Meatloaf
2 lb ground pork
1 tbsp vegetable oil
1 onion, finely diced
4 cloves garlic, minced
1 jalapeno pepper, seeded & minced
1/4 cup minced dried tomatoes
2 Tbsp chili powder
2 tsps ground cumin
1 1/2 tsps salt
1 tsp thyme
2 tsps black pepper
1/4 cup chopped parsley
1/2 cup bread crumbs
1/2 cup milk
Saute onion, garlic & jalapeno in oil about 10 min; let cool slightly
Combine with all other ingredients & mix thoroughly
Place mixture in 9 x 4-inch loaf pan
Bake at 350 deg F for 1 1/2 hrs
Serve with mashed potatoes & gravy
Mexican Eggnog (Rompope) Recipe
Mexican Eggnog (Rompope)
2 cups granulated sugar
8 egg yolks
2/3 cup whipping cream
1 tsp vanilla extract
1 can sweetened condensed milk
2 cups light or dark rum
2/3 cup bourbon
Beat sugar & egg yolks together until well combined, then beat in the remaining ingredients, one at a time, until the sugar is dissolved
Store, refrigerated, in a glass jar for no more than a few days
