Pasteles de Cacao (Cocoa Cakes)

1/2 cup butter
1 cup granulated sugar
3 eggs
3/4 cup cocoa
1 1/2 cups flour
3 tsps baking powder
1/8 tsp salt
2/3 cup milk
1 tsp vanilla extract

Beat butter until creamy
Gradually add sugar, beating until mixture is light & fluffy
Add eggs, one at a time, beating well
Sift together cocoa, flour, baking powder & salt
Add dry ingredients alternately with milk until thoroughly mixed
Mix in vanilla extract
Spoon batter into greased & floured muffin tins
Fill two-thirds full
Bake at 375 deg F until cake tester comes out clean, about 20 min
Do not over-bake
Remove cakes from tins & cool on wire racks

Serve warm or cold

Pineapple Tequila

Keep a large jar of this tequila working on your kitchen counter
It makes terrific margaritas
After the mixture has been topped with fresh tequila two or three times, you can finely dice the softened pineapple, warm it in butter with extra brown sugar to taste, & serve it as an ice cream topping

Tuscan Beef Enchiladas

Tucson Beef Enchiladas

Yield: 6 servings

1 lb ground beef, cooked & fat drained
1 onion, minced
2 (4 oz) cans diced chile peppers
1 clove garlic, minced
4 cups tomato sauce
1/2 tsp salt
1 egg, beaten
1/2 lb Cheddar cheese, grated
12 corn tortillas, softened
Olive oil
Red sauce
2 tsps vegetable oil

Heat 1/2 inch of oil in skillet & fry tortillas about 15 seconds each side; remove & pat off excess oil

In separate skillet heat 2 Tbsp oil & saute onion until tender
Add chile peppers, garlic, tomato sauce, salt & pepper
Add ground beef
Simmer uncovered 10 min

Dip tortillas in egg, fill with sauce mixture, roll & place in shallow greased baking dish

Pour red sauce over tortillas, top with grated cheese & bake uncovered at 350 deg F for 15 min
