Kumquat Liquado
12 kumquats, washed & unpeeled
1 cup water or milk
3 Tbsp superfine sugar
2 h&sful ice
Put all ingredients into a blender
Blend for 10 seconds only & immediately strain through a fine sieve into a glass
Drink while still foamy & cold
Lime Liquado
2 large, ripe Mexican limes
2 h&sful ice
1 cup granulated sugar
3 Tbsp superfine sugar
Cut the limes in half
Squeeze the juice into a blender
Add the remaining ingredients, including the lime rinds
Blend for 10 seconds only & immediately strain through a fine sieve into a glass
Drink while still foamy & cold
Mango Liquado
1/4 cup pureed mango
1 cup water or milk
2 h&sful ice
2 Tbsp superfine sugar
Put all ingredients into a blender & blend for 15 seconds only
Immediately strain through a fine sieve into a glass
Drink while still foamy & cold
Orange Liquado
2 oranges, cut into eighths & juiced
1 cup water or milk
2 h&sful ice
2 1/2 Tbsp superfine sugar
Put everything, including the orange peels & juice, into a blender & blend for 4 seconds only
Immediately strain through a fine sieve into a glass
Drink while still foamy & cold
Strawberry Liquado
10 ripe strawberries
1 cup water or milk
2 h&sful ice
2 Tbsp superfine sugar
Put everything into a blender & blend for 15 seconds only
Immediately strain through a fine sieve into a glass
Drink while still foamy & cold
Tamarind Liquado
2 Tbsp tamarind paste
1 cup water
3 Tbsp superfine sugar
2 h&sful ice
Put everything into a blender & blend for 15 seconds only
Immediately strain through a fine sieve into a glass
Drink while still foamy & cold
Tortilla Dinner
Tortilla Dinner
1 cup flour
1/2 cup yellow cornmeal
1/4 tsp salt
1 egg
1 1/2 cups cold water
1 lb lean ground beef
Tomatoes, chopped
Onions, chopped
Green bell pepper, chopped
1 lb cheese, grated
Lettuce, thinly sliced
Combine flour, cornmeal, salt, egg & water in a large bowl, then beat
Spoon 3 cup of batter onto a moderately hot ungreased griddle, flattening with the bottom side of a spoon to make thin (1/4-inch) pancake
Turn tortilla when edges become dry, but not browned, & cook on other side
Set aside
To complete meal, brown ground beef
Reheat tortillas on a hot griddle with oil until lightly browned
Place a portion of tomato, onion, bell pepper, cheese & lettuce on top of each tortilla; roll & enjoy!

This is delicious served with canned hominy, drained, sauteed in a little butter & heated through with some sour cream
Garnish hominy with chopped fresh cilantro
4 boneless pork blade steaks, about 1/2-inch thick
1 large red onion, sliced
1/2 cup fresh Mexican lime juice
1 tsp salt
1/2 tsp cayenne
Place pork & onions in a self-sealing plastic bag
Combine remaining ingredients & pour over pork; seal bag & refrigerate for 2 to 4 hrs
Lift pork steaks from marinade, brushing off onions
Broil or grill over hot coals for 8 to 10 min, turning once
Heat onions & marinade to boiling
Serve onions with pork steaks & warmed tortillas
Serves 4
