Best of the West Barbecue Sauce

This sauce has been around for so long that its origin has disappeared into the sunset
It can be used for many things

1 cup vegetable oil
1 1/2 cups white onion, diced
1 1/2 cups catsup
1 1/2 cups bottled water
1/3 cup lemon juice
1/3 cup Mexican lime juice
3 tablespoons granulated sugar
3 tablespoons brown sugar
1/3 cup Worcestershire sauce
3 tsps prepared mustard
1/2 cup red wine vinegar
1 tablespoon chili powder
1 tsp dried sweet basil
1 tsp garlic powder
1/3 cup pancake syrup

Combine all ingredients in a large saucepan
Simmer slowly at least 2 hours uncovered
Sauce will become bitter if cooked with a lid

Makes about 4 cups

Chicken Tacos With Lime Sauce

Chicken Tacos with Lime Sauce

Chicken
3 large boneless, skinless chicken breasts
1 (16 oz) jar salsa

Place chicken in baking dish
Season with salt & pepper
Cover with aluminum foil & bake for 1 hour at 325 deg F
Cool to touch, then shred or dice into small pieces & put into saucepan
Add salsa to chicken
Set aside until ready to heat for tacos

Lime Sauce
1 cup mayonnaise
Juice from 3 or 4 large limes

In mixing bowl combine mayonnaise & lime juice
Whisk together until well blended
Refrigerate until needed

1/2 head cabbage, shredded
1 bunch fresh cilantro, chopped
1 cup grated Cheddar cheese
1 (12 count) package taco size wheat or flour tortillas

Place desired amount of heated chicken mixture into warmed tortilla
Top with Lime Sauce, cabbage, cilantro & cheese

Serve with refried beans & Mexican fried rice

1/2 tsp Mexican oregano
1/2 tsp salt
1 tbsp Masa Harina
