1 (21 oz) can apple pie filling
6 (8-inch) flour tortillas
1 tsp ground cinnamon
1/3 cup butter or margarine
1/2 cup granulated sugar
1/2 cup firmly packed light brown sugar
1/2 cup water
Spoon fruit filling evenly down center of each tortilla; sprinkle evenly with cinnamon
Roll up, & place, seam side down, in a lightly greased 2-quart baking dish
Bring butter & next 3 ingredients to a boil in a medium saucepan; reduce heat, & simmer, stirring constantly, 3 mins
Pour over enchiladas
Bake at 350 deg F for 20 mins

2 tablespoons vegetable oil
4 lb separated chicken wings
2 cups enchilada sauce
1 envelope taco seasoning mix
1/2 cup finely chopped canned jalape

Serves 8
6 (10-inch) flour tortillas
16 ozs cream cheese, softened
3 ozs maple syrup
1 1/2 tsps orange zest
2 peaches, pitted & cut into wedges
3 ozs apricot preserves
In a mixing bowl combine the cream cheese, maple syrup, orange zest
Set aside
In another mixing bowl combine the peaches & apricot preserves
Spread a thick layer of the cream cheese mixture on one half of the tortilla
Top with peaches
Fold over tortilla
Repeat process with remaining ingredients
Place quesadilla on a heated & lightly buttered flat grill or saut
