Grape Juice
10 lb Concord grapes
2 quarts water
2 lb granulated sugar
Use well-ripened but not overripe grapes
Pick over & wash grapes
Place in kettle
Cover with the water & let boil until the seeds are free
Strain while hot through a cloth bag
Heat juice to boiling point & skim
Let boil again & skim; then add sugar
Heat to the boiling point
Boil 1 min
Pour into hot sterilized jars & seal, or use self-sealing bottles
If ordinary bottles are used, do not fill too full
Immediately after filling, place corks over bottles very lightly at first; as they cool, push corks down; then cover with melted paraffin or sealing wax to make the seal airtight
For white grape juice, select white Delaware or Tokay grapes

1 (6 1/2 oz) can tuna, well drained
3/4 cup chopped red onion
1 large tomato, chopped
1 jalape

12 large red dried chile peppers
3 tablespoons flour
3 tablespoons lard or vegetable oil
1 1/2 quarts water
1 tsp salt
2 cloves garlic
1 pinch Mexican oregano
Remove seeds & white threads or veins from peppers & wash in cold water; cook in boiling water for about 10 mins, or until tender
Remove the peppers & keep the water in which they were boiled
Grind the peppers to a paste; adding a little of the water in which they were boiled to make this easier; add in all 1 quart of the water in which the peppers were boiled
Heat the fat or oil in a skillet
Fry the garlic in this
Remove & brown the flour in this fat; gradually add the chile mixture & salt, stirring well
Simmer 10 mins
This will keep in a cool place for a while
