Sparkling Limeade (Limonada)
1/2 cup granulated sugar or more, to taste
1 1/2 cups freshly-squeezed lime juice
1 quart sparkling water
Beginning with the 1/2 cup sugar, add to the lime juice & stir until the sugar is dissolved
Add the sparkling water, stir & taste for sweetness; add more sugar if needed
Pour over ice to serve

2 large eggs
1 tsp salt
1/3 cup fine dry breadcrumbs
1 1/2 lb lean ground beef
1/2 lb ground pork
1/4 cup coarsely chopped fresh cilantro
9 (3/4-inch) cubes queso fresco
9 whole pimento-stuffed green olives
2 Tbsp lard or vegetable oil
1 cup finely chopped white onion
2 cloves garlic, minced

This is ideal for filling tacos, flautas & taquitos
2 Tbsp olive oil
1 lb lean ground beef
2 medium tomatoes, chopped
1 1/2 medium onions, chopped
3 cloves garlic
3 slices bread, chopped
1/4 tsp ground cumin
1/2 tsp Mexican oregano
1/2 tsp salt, or to taste
1/2 tsp ground pepper
Heat a skillet over medium heat, then add oil & ground beef
Lightly brown the meat, stirring & chopping it to break it up
Meanwhile, blend the remaining ingredients to a paste
As soon as the meat has been lightly browned, add the blended ingredients & stir until well combined
Turn the heat to medium low & continue to fry for about 15 min, stirring often until most of the liquid has evaporated
Makes about 2 cups
