2 (16 oz) cans yellow hominy
1 cup grated Monterey jack cheese
1 tbsp minced onion
1 (4 oz) can green chiles, seeded & chopped, or

Simply the Best Pancake Syrup
3 cups brown sugar (one 1-lb box)
1 1/2 cups boiling water
1 or 2 cinnamon sticks, broken
1 tsp whole allspice
1/2 tsp whole cloves
Zest of one orange or one lemon
1 tsp maple extract (optional)
1/4 tsp almond extract
Mix brown sugar & water together
Add whole spices & citrus zest
Cover & let steep for several hrs
Taste to see if spicy enough &, if so, strain into a decorative glass jar with a lid
Stir in maple & almond extracts
Makes about 2 cups
Store in the refrigerator

2 cups sifted flour
3 tsps baking powder
1/2 tsp salt
5 Tbsp vegetable shortening
2 tsps grated orange rind
About 2/3 cup milk
Orange juice
Sugar
Preheat oven to 450 deg F
Sift flour, baking powder & salt
Cut in vegetable shortening & orange rind until mixture is as fine as meal
Add milk, mixing until a soft dough is formed
Knead lightly on a floured surface for about 20 seconds
Roll to 1/8-inch thickness
Cut dough in 1-inch strips, then make 3/4-inch cuts about an inch apart in the strips
Roll up strips as for a jellyroll (a 10-inch strip makes a medium-size roll)
Place in greased muffin pans
Brush rolls with orange juice & sprinkle with sugar
Bake for 12 to 15 min
Makes 12
