Seafood Sauce Recipe

Seafood Sauce

Dip ice cold boiled shrimp into this sauce for a wonderfully different taste treat

4 tablespoons Mexican lime juice
1/2 cup olive oil
4 large poblano or Anaheim chiles, minced
6 serrano chiles, minced
2 cloves garlic, minced
2 tsps Mexican oregano
Pinch of salt, or to taste
Pinch of pepper, or to taste
4 tablespoons cilantro, chopped & loosely packed

Mix all the ingredients & allow to st& at room temperature for at least 1 hour before serving

Green Onion Burritos

Green Onion Burritos

1 lb lean ground beef
1 small onion, chopped
8 ozs shredded Longhorn cheese
3/4 cup evaporated milk
1 can cream of chicken soup
4 ozs Velveeta cheese
1 (4 oz) can diced green chiles
1 package green onion dip mix or Hidden Valley

Habanero Pepper Sauce

Habanero Pepper Sauce

12 Habanero chiles, stems removed, chopped
1/2 cup chopped onion
2 cloves garlic, minced
1 tbsp vegetable oil
1/2 cup chopped carrots
1/2 cup distilled vinegar
1/4 cup Mexican lime juice

Saute onion & garlic in oil until soft

Add carrots with about 3 Tbsp of water
Bring to a boil; reduce heat & simmer until carrots are soft

Place this mixture & the chiles in a blender, then puree until smooth

Combine the puree with vinegar & lime juice & simmer for 5 min to combine flavors

Strain mixture into sterilized bottles
