Black Bean & Corn Salsa
Serve this with grilled chicken & meat
2 medium fresh ears of corn,
Chiltepin House Sauce
Chiltepin House Sauce (Salsa Casera)
2 cups chiltepins
8 to 10 cloves garlic
1 tsp salt
1 tsp Mexican oregano
1 tsp cori&er seed
1 cup water
1 cup cider vinegar
Combine all ingredients in a blender & puree on high speed for about 4 min
Refrigerate for 24 hrs to allow the flavors to blend
Because it is so hot, this will last for years in the refrigerator!

2 cups cooked white rice
1 1/3 cups whole milk
1/2 cup brown sugar
1 tbsp soft butter or margarine
1 tsp vanilla extract
2 eggs, beaten
1/2 cup raisins
Preheat oven to 325 deg F
Prepare rice & set aside to cool
In a separate bowl, combine remaining ingredients, except raisins, & mix
Stir in the rice & raisins until well blended
Grease a baking dish & pour in the mix
Cover & place in a pan of hot water
Bake for 60 min
Serve hot or cold in a small dish
Top with a dash of cinnamon or nutmeg
Variation
Bake pudding in a prepared pie shell or on a bed of cookie crumbs
Make sure the pan is well-greased
