Cato’S Cheese Bread

Cato’s Cheese Bread

An old recipe for Roman bread

1 cup feta cheese, drained, crumbled, and packed
into the measuring cup
1/2 cup unbleached, all-purpose flour
1 egg, beaten
6 bay leaves
2 tablespoons honey

Put the cheese into a medium size mixing bowl
Mash well with the fingers until it becomes a smooth, lumpless paste

Add the flour and mix well with the fingers

Add the beaten egg and mix well
The dough will be rather sticky

Divide the dough into two equal parts, then form two round, flat, 1/2 inch thick loaves
Lay each on three bay leaves set on a greased baking sheet, and bake in a preheated 400 degree F oven for 1 to 1 1/2 hours, or until cooked through

Remove the loaves from the oven, spread the tops with the honey, and let cool

Remove the bay leaves before serving

Beef With Broccoli

Beef with Broccoli

2 cups broccoli
2 Tbspgranulated sugar
1 tablespoon cornstarch
1 cup water
1/4 cup soy sauce
1 cup thinly sliced beef
Vegetable oil

Cut broccoli into 1-inch pieces
Mix sugar, cornstarch, water & soy sauce together in a bowl
Heat vegetable oil in frying pan
Add broccoli & stir fry for 3 to 4 min
Remove broccoli & set aside

Heat vegetable oil again & stir fry the sliced beef for 1 to 2 min
After stir frying the meat, add sauce to the meat in the pan & allow the sauce to boil for 15 to 20 seconds, then add the broccoli & mix together
Pour broccoli & beef onto a bed of rice & serve

Almond Paste Cookies

Almond Paste Cookies

1/2 pound almond paste
2 egg whites
1/2 cup granulated sugar
1/2 cup confectioners’ sugar
1/4 cup all-purpose flour
Pinch of salt
2 ozs slivered almonds
Maraschino cherries

Mix almond paste and egg whites with hands
Add dry ingredients and mix well
Roll into balls; roll into slivered almonds
Place on foil lined cookie sheet
Press thumbprint into ball
Place 1/2 or 1/4 maraschino cherry in indentation
Bake at 300 deg F for 15 to 20 minutes
