Chipotle Pepper Sauce
2 Tbsp butter
2 Tbsp flour
2 cups heavy cream
1 tbsp chicken base
3 chipotle chiles, chopped
2 ozs Monterey jack cheese
1 cup sour cream
Melt the butter in a saucepan; add flour & stir for 1 min
Add cream & chicken base & stir until the mixture thickens
Add chiles & cheese
Stir until the cheese melts
Remove from heat
When the boiling stops, fold in the sour cream
