Chalupas
1 (16 oz) can refried beans
1 (10 oz) can Ro-Tel, pureed
12 corn tortillas
1/4 cup vegetable oil
Salt & pepper
1 lb ground chuck
1/2 tsp ground cumin seed
1 large onion, chopped
1 head lettuce, shredded
2 large tomatoes, diced
1 cup grated Cheddar cheese
In separate pans heat the beans & the Ro-Tel tomatoes
Fry tortillas in oil for 1 min on each side or until lightly browned
Drain on a paper towel & salt
Discard oil & brown ground chuck
Add cumin & salt & pepper to taste
Stir
Spread hot beans on each tortilla
Sprinkle over beans a layer of meat, onion, lettuce & diced tomatoes
Spoon over each the hot Ro-Tel tomatoes & top each with cheese
Top with Avocado Dressing, if desired
Two chalupas make a meal

Avocado Dressing
1 large avocado, pureed
1 tbsp lemon juice
2 Tbsp mayonnaise
2 Tbsp sour cream
Salt, to taste
Seasoned salt, to taste
