Szechwan Shrimp
2 Tbsppeanut oil
1 pound extra-large raw shrimp, shelled & de-veined
1/4 cup minced scallion
2 Tbspminced fresh ginger
2 Tbspdry sherry
2 Tbspsoy sauce
2 tpss granulated sugar
1/2 tps salt
2 to 3 Tbspcatsup
2 Tbspchili sauce
1 tps red pepper flakes
Heat oil in a wok or large, heavy skillet
Add shrimp, scallion, ginger & garlic
Stir-fry until shrimp are pink
Add sherry, soy sauce, sugar & salt
Stir well & blend in catsup, chili sauce & red pepper flakes
Serve over hot rice
