Shrimp Fried Rice

8 ounces shrimp (peeled, deveined & no tails)
2 cloves garlic (thinly sliced)
4 green onions (sliced)
3 eggs (beaten)
4 cups cooked rice
2 Tbspolive oil
2 Tbspsoy sauce

In a wok, heat 1 tablespoon oil till hot, add garlic & fry till brown, take out & discard
Add shrimp to oil & stir fry till COOKED THROUGH (2 to 3 min)
Remove shrimp & set aside
Add other tablespoon of oil to wok & scramble eggs set aside
Add rice to wok & stir fry until hot & dry, add soy sauce & stir until rice is even brown in color
Add shrimp & eggs & stir fry 2 min
Add green onions & stir fry another 2 to 3 min or until onions are good & hot

Serve immediately
