Western Cornbread
1 cup white or yellow cornmeal
1 cup sifted flour
1/4 cup granulated sugar
3 tsp baking powder
1 tsp salt
1 egg
1 cup milk
1/4 cup melted butter
Preheat oven to 425 deg F
Combine cornmeal, flour, sugar, baking powder & salt in a bowl
Beat egg with milk & butter
Add to the dry ingredients & stir lightly, just until mixed
Pour into a well-buttered 9-inch square pan
Bake for 20 to 25 min
Tamale Cornbread
Add 2 tsps chili powder to the dry ingredients & 1/2 cup finely-chopped ripe olives to the batter before baking
